Abstract

LAMPERT, Damián Alberto; LEOTTA, Gerardo Anibal  and  PORRO, Silvia. Un análisis documental sobre el abordaje de las enfermedades transmitidas por alimentos en carreras científico-tecnológicas: los casos de Medicina Veterinaria e Ingeniería en Alimentos. Analecta vet. [online]. 2022, vol.42, n.2, e068. ISSN 1514-2590.  http://dx.doi.org/https://doi.org/10.24215/15142590e068.

A documentary analysis of minimum contents and study programs of the Veterinary Medicine (National University of La Plata) and Food Engineering (National University of Quilmes) careers related to foodborne diseases (FD) is presented. The objective of this work was to determine how FD are approached from different health points of view at higher educational levels, by using a qualitative exploratory methodology. In both careers, it was observed that the study of FD includes chemical, physical and biological contaminants. However, Veterinary Medicine has an approach that corresponds to a medical career profile, that is, clinical-epidemiological, while Food Engineering has an industrial approach.

Keywords : scientific-technological careers; curriculum; foodborne disease; health approaches.
