Abstract

This article presents a work carried out within the framework of the community patrimonial project entitled "Of pots and stoves. Cycle for the gastronomic safeguard of the communities", carried out during 2018 in the town of Benito Juárez, province of Buenos Aires, Argentina. This is the organization of cooking workshops in which members of different groups of immigrants seek to publicize, share, and value recipes, flavors, and significant dishes of their culture and identity. The objective of this paper is to propose a reading that links the analysis of this case with the perspective of cultural heritage and that can be updated from the anthropological theories of performativity. For the surveys of the meetings, methodological work was carried out with participant observation, photographic record, and interviews. In this sense, this approach aims to constitute a contribution around the processes of patrimonial activation and identity resignification through the analysis of performativities and their link with cultural heritage. The results of the survey made it possible to address a daily practice (cooking) that responds to a universal need (eating) that became a symbolic and analytical trigger in the light of which rethink processes that involve collective memory, identity and territoriality, all elements present in the processes of patrimonialization
