Abstract

This paper presents a methodology for determining the density of a sample of whole bean grains (Phaselous vulgaris L) based on digital image processing, characterized by its simplicity and easy implementation. It requires measures of the mass and the volume of the sample, which are made with a scale and with a threedimensional model of the grain respectively. In this three-dimensional model it is assumed that the volume of each grain is proportional to its length and to the square of its width. These two values are determined from the use of techniques of digital image processing applied to the image of whole grain samples obtained with a desktop scanner. The proportionality constant is determined experimentally by comparison with the volume of the sample subsequently obtained by the toluene displacement method. Ten samples to determine and analyze the behavior of the constant of proportionality and five for validation of the proposed model were prepared. The density obtained with this methodology for the validation samples was contrasted with that obtained with the toluene displacement method being the relative percentage difference lower than 5%.
