A market study allows us to reduce uncertainty and know we will find when launching a new product to the market. The aim of the present work was to evaluate the acceptability of organic cucumber chips as a possible alternative to increase vegetable consumption. The market study was carried out by three assays: first, it was realized a poll to identify potentials, consumers, sell points, communication medium, among other things. Then, a sensory analysis with consumers was realized to evaluate the overall acceptability as well as the texture and flavor of the product. Afterward, by a poll, the product presentation was evaluated to determine the best packaging and legend that identify the new product. On the other hand, an analysis of strengths, opportunities weaknesses, and threats was defined. The results obtained allowed us to define the product as a response to the demand of consumers who choose to eat healthily, being a pleasant product even for people who do not consume cucumber.
