The animal welfare concept must be considered in every cattle life phases. Its preservation is not just integrated by ethical aspects, but by the possibility of improving productivity and meat quality. It is important that every person involved in the raising process, transportation and slaughter of cattle understands the importance of animal care. It is necessary know the mechanisms by which the conditions provided affect the sensorial and nutritional characteristics of the meat. It is known that meat composition begins to be defined in the primary production stage. Intensive production systems that aim to maximize production must guarantee animal welfare. This is because animals depend entirely on man’s will to agreement adequate food, water and environmental conditions. The animal comfort food and genetics contribute to obtaining an excellent carcass. While acute and chronic stress events negatively affect the characteristics and preservation of meat products. The objective of this review is to evaluate the effects of animal welfare on production and meat quality. In addition, a fattening system developed by the National Agricultural Technology Institute (INTA) is presented, where management and feeding conditions are considered to contribute to animal welfare.
