The puesteros of central west of Argentina are traditional ranchers and pastoralists who live in the plains and range up into the Andes. In this paper, we analyze the puestero´s faunal consumption from a zooarchaeological and taphonomical perspectives. The analyses are centered on the differential consumption of wild, domestic, and purchased fauna. We propose that there is a relationship between the consumption of these different kinds of faunas, the type of residential mobility, and the contact with urban economies. In order to assess this proposal, puestos with different level of sedentism are sampled. Zooarchaelogical analyses are accompanied with taphonomic analyses in order to evaluate if post-depositional processes could bias the assemblages.
