The history of Antofagasta de la Sierra, Catamarca, includes one of the most extensive occupational sequences in Northwest Argentina. Systematic anthracological studies carried out in this sector of the Puna have produced knowledge of several aspects of the interaction between hunter-gatherer and agropastoral societies and combustible resources over the long duration. In this article, we address the study of coals from two stoves built in two enclosures, the open kitchen and the closed kitchen. The two kitchens are part of a residential space in Puno, the Estancia Peñas Chicas, inhabited by a family of shepherds during the Republican Period (the nineteenth and twentieth centuries). Results indicate the presence of individuals from the families Asteraceae, Fabaceae, and Solanaceae. Three taxa could not be identified, and five fragments remained in the unidentifiable category. The fuelwoods from the Republican occupation identified taxonomically correspond to local species used for kindling, which have also been identified in pre-Hispanic contexts. The architecture of the combustion structures studied presents similar features to those recorded for previous periods. Results to date demonstrate that fuel resources from local flora were managed and combustion practices occurred in both kitchens, where fires were lit for various purposes.
