In the recent years, the matter of the farm workers in the European agriculture has been gathering importance, closely related with the international and intercontinental migrations. The French agriculture has a long tradition in the employment of foreign workers, recruited primarily in the North African region of Maghreb. Recently is also gathering importance the sub-hiring of South American workers through sub hiring companies in Spain. The study analyses the meaning and the effects produced by the introduction of workers with a new ethnicity in the work market of the local agrarian production.  In this sense, we present the results of a case research in the southeast French department of Bouches-du-Rhône, about the production of fresh fruits and vegetables.
