Abstract

MINGO, Graciela et al. Dairy farmers and cheese-makers from San Martin Colony (Entre Rios, Argentina). Cienc. docencia tecnol. [online]. 2010, n.41, pp.31-48. ISSN 1851-1716.

This article presents an analysis of the activity of the dairy farmers who also produce cheese in San Martin Colony, Parana County, Western Milk Field from the Entre Rios Province (Argentina). Six cases have been studied by identifying the means of work, training, life trajectory, quality standards in cheese production and the trade circuits. There have been used sources of secondary information obtained from INTA (National Institute of Farming Technology) and the National Farming Census 2002. Semi structured interviews were applied in order to achieve a major contact with the informants. The results demonstrate that the dairy establishments are an occupation that provides an extra value to the economy of the region and that they adapt the quality standards to compete in the market what is favoured by the access to electrical energy. The commercialization of their products is carried out in the domestic market at local and regional level.
