Abstract
MARTINS, Uiara Maria Oliveira and TEIXEIRA BAPTISTA, Maria Manuel Rocha. Heritage of Portuguese Culinary in Brazil as a Product of Cultural Tourism. Estud. perspect. tur. [online]. 2011, vol.20, n.2, pp.404-424. ISSN 1851-1732.
The Portuguese and the Brazilian cultures have a long historical relationship that has developed since colonisation until nowadays, through tourism, immigration, literature, music, gastronomy... Concerning gastronomy, much from the Portuguese heritage can be found in Brazilian cuisine, and the Portuguese settler adapted himself to what these lands had to offer. This adaptation has been expressed in many dishes with Portuguese roots that underwent some transformations in Brazil. From the existing relationship between these two cultures in the gastronomy field, it is revealed that many of the dishes taken to Brazil by the Portuguese were brought to Portugal by other peoples. From an extensive literature review, a general analysis of these two cuisines is presented with the aim of transforming the history of this relationship into a cultural tourism product. Portugal and Brazil constantly communicate with each other nowadays, through tourism activity. From this starting point, specifically the relationship between tourism and gastronomy, a "voyage in history" centred in cuisine is proposed. In this context, this research identified the heritage of the Portuguese gastronomy that was left in the history of Brazilian cuisine. It is proposed the transformation of this heritage into a cultural and gastronomic tourism route, called "Portuguese Gastronomy Route".
