Abstract

In the province of Misiones (Argentina) grape crops are developing as a productive alternative, particularly Vitis labrusca varieties and their crosses. The objective of this work was to obtain turbid and limpid grape juice from varieties cultivated in the province of Misiones and to generate information related with their acceptance and commercialization possibilities. Sensorial evaluation of the juice was made with affective tests. These sensorial evaluation (i.e. preference test) showed no remarkable preference for any of the processed juices (limpid or turbid). Limpid juice from Niágara R. and Venus had no significant differences from commercial juice. Nowever, Niágara R. juice had the highest degree of preference. These satisfactory results reveal the commercialization possibilities for Niágara R. and Venus grapes juice.
