This paper investigates the processes of social differentiation of horticultural producers in Mendoza in the last three decades. For this purpose, we use different theoretical approaches on social differentiation that encompass a combination of economic, demographic and social logics. The work is based on a qualitative approach, combined with statistical analysis techniques. As results, we highlight an important concentration and growth of companies linked to exports and new agro-industries. But also a sector dedicated to the provision of local food with a lesser impact of the concentration process, but affected by the outsourcing of the work process. However, the trends towards concentration and the disappearance of farms overlap with processes that sometimes go in the opposite direction.
