This paper focuses on the analysis of the shapes manufacturing discipline acquires in main meat-packing plants from Gran Rosario region. With this purpose, we analyze the senses and valuations expressed by workers since relationships and experiences of daily work life. From a theoretical and methodological perspective focusing on work processes subsumed under capital, we observe that the limitations in mechanization of productive processes and the preeminence of productive tasks with a significant handmade content in strategic sections, supposes the persistence of external surveillance devices, embodied especially by the factory’s night watchmen and foremen. In this sense, we identify coercive disciplinary tendencies that prevail in the plant, which are complemented and articulated with a set of mechanisms aimed at increasing flexibility in the use and management of force and to extend the workday. In the same way, we analyze other strategies that intend to generate involvement of workers with the company’s objectives.
