Abstract

Natural pigments present in honey are primarily carotenoids and flavonoids, ando also provide color and antioxidant capacity. The aim of this work was to establish a relationship between total flavonoids content and honey color and studying this parameter feasibility as an indicator of antioxidant capacity. Eighty one samples of honey were analyzed. Flavonoid compounds were determined by spectrophotometry and color was measured using a HANNA digital colorimeter. Flavonoids content was between 1.42 and 17.75 mg QE/100 g honey. The range of colors was wholly represented. Color and flavonoids content showed positive correlation (r2 = 0.93). This correspondence showed that flavonoids content contributed to the appearance attribute. Color determination would be useful as an indicator of flavonoids content in honey.
