This paper aims to present an analysis of the precarious work conditions in the restaurant industry, particularly of the operational workers of establishments located in the city of Mazatlán in the context of the tourism sector and the neoliberal model. The results offered here are the product of a methodological strategy combining quantitative and qualitative methods, within the framework of a broader investigation, which to okadvantage of conversations with actors from this branch of the economy, and qualitative observations. Among the most relevant findings are the precarious conditions of the restaurant sector, making visible the inconsistencies in the discourses that representit as an “engine of the economy” and an opportunity for the development of employment; on the other hand, that the perspectives of the different actors express conditions that enable the implementation of strategies that reproduce precarious structures.
