The main aim of this article is to highlight the theoretical and practical problems of the practice of anthropology in the institutional field of cultural heritage. The paper begins with a description of how the author, commissioned by Andalusian government, initiated research on festivals in the province of Granada in order to register them in the regional catalog of historical heritage, and includes an account of the procedures the author followed in doing so. The meaning of the practice and the discourse on cultural heritage of the Andalusian government is analyzed from that experience. The article concludes by discussing the role that anthropology has both in heritage processes and in the definition of the very concept of heritage.
