The aim of the present work was to perform a comparative analysis of commercial yerba maté standards from Argentina, Brazil, Chile, Paraguay and Uruguay valid up to March, 2007. The analysis scope included product description, denomination, classification, morphology, flavor, physico-chemical and microbiological requirements and analytical techniques. The results about yerba maté product obtained up to the date cited revealed consensus about product description, with the exception of Chile, which allows Ilex brasiliensis. Only Paraguayan standard briefly specifies flavor requirements. Physico-chemical characteristic standards do not differ so far; with the exception of Brazil which does not regulate them. The most important difference is found in microbiological tolerance values. Only Paraguay and Argentina specify the analytical methodology. Only Argentina, Brazil and Paraguay regulate composed yerba maté. The Paraguayan standard is the most complete about physico-chemical and microbiological requirements. These countries differ in the percentage of herbal and vegetal species content allowed.
