The effects of growing location, drying process and harvest time on the total polyphenol content (TPC) and the antioxidant capacity (AOC) of yerba mate (Ilex paraguariensis) were investigated. The Folin-Ciocalteu method and the DPPH assay, respectively, were used to evaluate the TPC and the AOC. The averages resulted 21,58 g chlorogenic acid equivalents % of dry matter (dm) and 26,40 g ascorbic acid equivalents % dm for TPC and AOC respectively. The TPC was only influenced by the harvest time; at the early harvest it resulted 4.5% higher than that at the end of the harvest (related to developmental stage). The effect of harvest time on the AOC depended on the drying process: in the traditional discontinuous bed driers, called"barbacua", no differences on AOC were found, but in the continuous rotary driers and in the belt driers the AOC at the early harvest resulted higher than that at the end of the harvest. For the obtention of yerba mate extracts enriched in TPC and with high AOC, the use of raw material obtained at the early harvest is recommended.
