Resumen

RIGODANZO, Sandra I; MOURA, Fernanda A; BRASIL, Carla C. B  y  SILVEIRA, Joice T. Evaluation of good practice handlers, responsibilities, documentation and registration in school’s kitchens from Itaqui-RS. Rev. cienc. tecnol. [online]. 2016, n.26, pp.53-59. ISSN 1851-7587.

The aim of this study was to evaluate the good food handler practices of school food services from Itaqui-RS. Data collection was done through two checklists of good practice - one for elementary schools (EMEFs) and one for childhood education (EMEIs) - based on the current sanitary legislation. The conformities percentage increased from 50.20% in the first application to 60.84% in the last. The EMEFs remained classified as regular sanitary risk, and EMEIs went from high sanitary risk to regular. The best result was observed in the categories of documentation, registration and responsibilities of EMEFs, which went from 25% to 66.67% of conformity. The EMEIs obtained an increase of 40% to 54.25% in category of food handlers among the checklists applications. We see the need for preventive and corrective actions of these schools by developing procedures of good practice, to promote health among students.

Palabras clave : Food handling; Foodborne diseases; Good manipulation practices; School feeding; Health risk.
