The objectives of the work were, determine consumption of carrots and commercial dressings and evaluate the functional potential of carrot-based dressings (CBD). Through descriptive, cross-sectional research and a self-administered survey, consumption of carrots and commercial dressings was determined in adults of Posadas, Misiones. 100% of respondents reported consuming raw and cooked carrots in their usual diet. 95% incorporates commercial dressings in hamburger, hot dog and sandwich. Considering these results; Four variants of CBD were evaluated: neutral CBD, CBD with ginger, CBD with basil, and CBD with cinnamon and nutmeg. Based on bibliographic review and nutritional analysis of the proposed product, it was possible to confirm the functional nature of CBD due to compounds such as β-carotene and its antioxidant property, as well as nutrients such as fiber, vitamin A, vitamin C, potassium and fatty acids. polyunsaturated, which reduce the risk of diseases, and provide health benefits.
