Background about bird use by ancient populations of the Chaco-Santiagueña region is scarce. In this paper, birds (except Rheidae) of ten archaeological sites from the agro-potterystage (ca. 350 AD until the Spanish conquest in the sixteenth century) are analyzed. The aim of this paper is to analyze bird remains recovered at the archaeological sites, the natural processes that intervened in the conformation of the samples, the human processing patterns and the role such remains had in the subsistence of ancient inhabitants. From the results, a processing pattern could be established that includes hindlimb defleshing and forelimb disarticulation, as well as cooking over direct heat of some specimens. Given the proportion at which birds are represented in relation to other taxa, its use is considered to have been a complementary/occasional resource.
