Sugar cane was introduced in the western Venezuela in the sixteenth century, coming from Hispaniola. Its cultivation and processing in the early colonial era inherited the techniques known in the Canary Islands and the Iberian peninsula. In the seventeenth and eighteenth centuries are incorporated innovations that had their origin in different regions of the New World. This article presents an overview of the colonial sugar techniques and the particular form that they had in the establishments of the historical region Barquisimeto from the end of the 16th century until the middle of the 19th century.
