This paper identifies and seeks to explain the diverse elements that impelled the elaboration of olive oil in the province of Mendoza. The promising prospects for replacing a demand traditionally supplied by Spanish and Italian products, as well as the policies to stimulate the olive sector, did not occur automatically. The limited capacity of the oil factories, attached to wine farms, and their weak degree of intermediation with respect to other edible oil factories show the difficulty in inserting themselves in the national consumer market
