Ornamental poultry farming plays a pre-eminent role in the preservation of genetic and cultural heritage of poultry throughout the world. In rural Argentina, the breeding of purebred birds is a widely spread activity, and it is represented by different amateur associations. The “Argentinean Standard for Poultry Perfection” (Standard Argentino de Perfección Avícola), published in 1928 by the “Argentinean Breeders Association for Poultry, Rabbits and Bees (Asociación Argentina de Criadores de Aves, Conejos y Abejas) continues to be the reference standard for the development of this activity. Promoted by the “South Salado Poultry Comission” (Comisión Avícola del Sur del Salado), and in collaboration with other national associations and organizations, it was decided to review, rewrite and reissue that standard, incorporating new breeds, such as the only known pre-hispanic South American fowl, the Mapuche Fowl (Gallus gallus domesticus). We proceeded to outline the novel standard for this characteristic South American avian biotype. This work provides a review and systematization of available data, for the development of the first racial improvement standard of the Mapuche fowl in Argentina
