The lack of labor on farms leads to the investigation of the relationship between the workers employed, the workers needed and the capital investment. The objectives of this paper are measured the current and no current asset of table grape farms, find optimal values of use of personnel in relation to the asset used and calculate the average means and labor margin for three strata. To do this, the assets needed, in different production levels must be describe; also marginal and average productivity values of labor must be calculated for different production levels; the variables that mostly affect the profit of companies must be found. A formula to calculated the sample size was used (n = 56). Three study strata were used (1 < 5 ha; 2 5-25 ha; 3 > 25 ha). Structured interviews were carried out variables about current and non current assets. Describe statistics, frequency analysis, optimal scaling and lineal regression were performed. The average and marginal productivity were calculated for permanent and temporary labor. Excel 2013 and Infostat V.14 were employed. The standard deviation of the value of the land is $ 4.217.370 with plantations of 74 years. There are 1.2 sheds per farm and being 35 years old. Hiring permanent workers is 5.76 times higher in level 3 than in level 1. The permanent workers range is from 1.3 to 7.5 per farm. Level 3 pays 90 % more wage than level 1 and 2. In the sample 1 permanent worker is hired every 5 ha. The marginal productivity registers a fall with more than 13 permanent workers. The average productivity decrease from 1 to 7 permanent workers. In conclusion the grater the capital, the better the profit. Current assets mean generate higher revenue than labor. Farms from 5 - 25 ha are more efficient with respect to the use of workers. Small farms handle the product commercially. The marginal productivity of labor has a decresing tendency.
