Brazil produces more than 241,000 tons of organic waste every day, generating environmental and health problems. On the other hand, about 44 million people lack access to food, even though in certain places (fairs, restaurants and industries) sufficient quantities to feed thousands of families are discarded. In an attempt to look for conditions that aim at reducing these wastes, and considering the convenience and the large consumption of cereal bars, this study developed three formulations of this product from the resulting sludge from the manufacture of cranberry, currently discarded in industries. The products were subjected to sensory tests for appearance, texture, flavor and purchase intent. According to the ANOVA results, there was no statistical difference between the scores assigned for the different formulations, except for that of the flavor, where the composition of 100% brown sugar received the lowest note.
